Forno da Telha Recognized as a Recommended Restaurant in the Michelin Guide

Forno da Telha, the restaurant at Holiday Inn Express Évora, has been recognized as a Recommended Restaurant in the Michelin Guide, a distinction that highlights the quality of its cuisine inspired by the traditions and authentic flavors of the Alentejo.

Forno da Telha, the restaurant at Holiday Inn Express Évora, has just earned Recommended Restaurant status in the Michelin Guide. The distinction was announced during the gala held at Savoy Palace, in Madeira, on March 10.

This recognition follows the evaluation of Michelin inspectors, who travel across the country in search of restaurants that stand out for the quality of their cuisine, consistency, and strong value for money, including them among their gastronomic recommendations.

Led by Chef Miguel Rocha Vieira, the concept behind Forno da Telha celebrates the authenticity and flavors of the Alentejo, with an approach that values local ingredients and respect for tradition. The restaurant also pays tribute to the history of the property, reviving the name of the former kiln where roof tiles were once produced in the hotel’s garden.

This project is part of AHM - Ace Hospitality Management’s strategy to elevate the dining offering across its hotels through distinctive concepts with a strong sense of identity. In the case of Forno da Telha, the restaurant was conceived as an independent space with direct street access, further strengthening its connection to the local community.

The culinary offering is rooted in Alentejo cuisine, reinterpreting traditional recipes and showcasing regional products. Signature dishes on the menu include specialties such as Migas Gatas with codfish and spinach purée, codfish with chickpeas and chorizo, free-range chicken, and black pork. For dessert, a traditional cart presents Alentejo classics designed to be shared.

The restaurant, led on a day-to-day basis by Chef André Campos, seats around 80 guests and has also been gaining recognition through initiatives such as the “Almoço dos Ganhões,” served on Sundays and inspired by the traditional meals of Alentejo’s rural workers, accompanied by live cante alentejano performances.

This distinction further reinforces the group’s positioning in the region and reflects AHM’s ongoing commitment to delivering outstanding dining experiences.
